Apricot Coconut Protein Balls
Apricot Coconut Protein Balls*I used canned coconut milk the water for a smoothie in my Coconut Water Red Grapefruit Smoothie the solids for this recipe,
- 2 cups Dried Apricot
- 1 cup Whole Almonds
- 2 1/2 cup Dried Coconut
- 2 tbsp Buckwheat Honey
- 1/2 cup Coconut Milk Solids
Blend until smooth, then add.
- 4 scoops Vanilla Whey Powder
Mix until combined. Scoop by the tablespoon full. Roll each ball in Dried Coconut as you make them.
- 1 1/2 cup Dried Coconut, for rolling.
Tasty apricot yummy no matter if you say it apree-cot or aah-pricot. Having lived in both my native Canada and then Australia I can say it either way. These are so fancy you should say it in the British style apree-cot. When I was living under down under in Tasmania we had an apricot tree. The summer I was pregnant with my son I ate the whole tree's worth of fruit. I sometimes didn't even wait until they were fully ripe. That summer I ate the fig tree too and twelve tomato plants. My lovely Italian neighbours also let me eat a large part of their plum tree. Apricots are full of anti-oxidants so my midwife said keep eating. Now my son helped me make these balls he scooped all the ingredients into the food processor, pushed the button and then helped roll the balls in coconut. He and I had them for an after school treat. I couldn't help wonder if the reason he likes apricots so much is because I ate so many when he was "on the inside". I asked if he wanted to help with the dishes and was told no, oh well. Enjoy!Love,
